2.5months
It’s been 2.5months since I last wrote. And I realize I have a lot of catching up to do. With the changing business climate we, as everybody has to adapt, which is not easy. Demands are changing, res sources, people, menus, operating hours, the way we work with just to name a few hings.
Just as few things that happend since last post.
- IRINOX blast chiller is somewhat installed. I do hope we will finish up the project soon.
- MINIPACK MVS-45, will reach its 15.000 cycles before I even post a picture of it. That machine is working overtime and we are not even at business levels where we used to be.
- Another PACOJET class in SanFran at the LeSanctuaire showroom with Kriss tomorrow.
- SeniorServ Fundraiser last night at the Anaheim White House.
- The almost perfect espresso gelato.
- Baby lamb rack sous vide, we found the perfect temperature that works for us.
- Sustainable menu options
- going green, a long certification process
We looks like we I need to get working here not to fall behind too far.
